The 2015 Ensemblé is a blend of Sauvignon Blanc (78%) and Sémillon (22%) that has been barrel fermented in mostly neutral barrels and aged on its lees for added creaminess.
This wine possesses a lovely chalky minerality outline with refreshing acidity. It is inspired by the beautiful dry, white wines found in Graves, a well-known sub-region of Bordeaux. A superbly rich layering of complex winemaking techniques, this wine brims with the mouth-watering exotic aromatics of passionfruit, plumeria flower and lemongrass. A vein of goosebery and seville orange marmalade carry through to the lingering, creamy finish. This wine shows a honeyed warmth throughout with a rich almost oily texture, finishing with a dried hay character so typical of aged Semillon.
Quite easily enjoyed upon release, our Ensemblé may be cellared for up to 5 years to experience further development.
We are quite proud to announce that our 2015 Ensemble has been selected to compete in this year's Six Nations Challenge.
