The 2016 Ensemblé is a blend of Sauvignon Blanc (71%) and Sémillon (29%) that has been barrel fermented in mostly neutral barrels and cement eggs. The wine then matured in barrels for a total of 10 months on its lees for added creaminess.
This wine possesses a lovely chalky minerality outline with refreshing acidity. It is inspired by the beautiful dry, white wines found in Graves, a well-known sub-region of Bordeaux. A superbly rich layering of complex winemaking techniques, this wine brims with the mouth-watering exotic aromatics of jasmine, pomelo, tangerine and dried apricot, finishing with a golden hay character that is so typical of aged Semillon. This wine shows a floral honeyed warmth throughout with a rich almost oily texture.
Quite easily enjoyed upon release, our Ensemblé may be cellared for up to 5 years from vintage date to experience further development.
We are quite proud to announce that our 2016 Ensemble has been selected to compete in this year's Six Nations Challenge.
In 2017, our 2015 Ensemble was honoured with the top award at Wine Align National Awards of Canada receiving a Platinum medal. Only 1% of the wines judged received Platinum recognition.
