2016 Shiraz Passimento
This delicious wine was made using the ‘Appasimento’ drying method. This technique has been used since ancient times and made famous the world over with the Amarone and Rippasso wines of the Veneto region of Northern Italy.
The wine opens with intoxicating aromas of violets, mulberries, and star anise with layers of earth and hints of briary twig, reminiscent of a big California Zinfandel. The palate is incredibly round and rich with layer upon layer of dried blueberries smothered in the darkest chocolate, over ripe stewed prune plums, all spice and a dusting of cocoa powder and freshly roasted espresso beans. Viva Italia!!
A hugely complex and full-bodied wine that can be enjoyed now after 2 years bottle aging but with the concentration to age beautifully over the next decade if you can resist its charm.
